Why Eating Sugar Feels So Good
According to a study in British Journal of Nutrition, there is a new determining factor as to why eating sugar makes us feel so good. According to researchers, it is the influence of glycemic index (GI) and glycemic load (GL) on the ratio of tryptophan relative to other large neutral amino acids. Tryptophan is an amino acid that has a part in regulating how good we feel emotionally.

In the study, subjects consumed a high GI mixed-macronutrient meal, a low-GI mixed-macronutrient meal, and a carbohydrate-only high-GI meal on separate days. The GI, GL and insulin index values were largest after the carbohydrate-only high-GI meal, followed by the high GI mixed-macronutrient and low GI mixed-macronutrient meals, respectively.

The percentage increase from baseline in tryptophan levels after the carbohydrate-only high-GI meal (23 %) was only marginally higher than after the high GI mixed-macronutrientmeal (17%), but it was more than threefold greater than the low-GI mixed-macronutrient meal (8%).

This study demonstrates that the postprandial rise in tryptophan was increased by additional carbohydrate ingestion and higher GI. Therefore, the meal GL appears to be an important factor influencing the postprandial tryptophan concentration.

Bonnie - this explains why we feel good for a while and then too often crash emotionally after eating too much sugar. The high GL meals create tryptophan overload in the brain. After the tryptophan is quickly used up, a crash often ensues, and the brain craves more sugar because it identifies feeling good with tryptophan overload. As seen with the low glycemic meal, the spike in tryptophan is much less, making it much more manageable for the brain to handle.
